Hello everyone and happy new month.

In this month of November, I will be taking you on a very interesting food journey I promise you won't regret embarking on it.

So, in this month of November, I will be teaching you something new about yam.

Yam has a lot of nutrient density and is very healthy when consumed. It contains vitamin C, dietary fibers, thiamine, manganese, vitamin B6 and potassium. Yam has very low Glycemic index and supplies around 118 calories for every 100grams.

Let me tell you a secret, I don't like yam. Maybe it's because I'm tired of the traditional method of preparing yam and I know you are tired of our everyday procedure of yam preparation too. If not white yam and oil today, then is yam porridge tomorrow or roasted yam and ugba the day next day. Enough is enough.

Now the big question is, ARE YOU READY TO EMBARK ON THIS FOOD JOURNEY? IF YES, THEN LET'S GO.

For this week, I will teach you how to prepare a wonderful dish with yam Called YAMARITA

Let me introduce you to the ingredient;

RECIPE
5 thick slices of yam
2 eggs
1cup of flour
½ teaspoon of pepper
1teaspoon of salt
1cup vegetable oil for frying

PROCEDURE
Slice and peel the skin off the yam, cut the yam into thick length-wise strips. Rinse the yam with clean water to get rid of the dirt and place in a medium size pot. Add the salt, and just enough water to cover the yam in the pot and cook for about 15mins still soft. Drain the water from the yam, set aside to cool.

In a bowl, break the eggs into a small bowl, add a pinch of salt, whisk and set aside. In another bowl, sift the flour and add pepper and a pinch of salt, mix well and set aside.
Dip a slice of yam into the flour and coat all the sides by rolling the yam in the flour, transfer the coated yam into the egg wash and turn to coat every side also. After coating the egg wash, transfer the coated yam into the heated oil and leave to fry till golden brown.

Once fried, scoop out from the pan and leave to drain. Transfer to a plate and serve.
You can serve this with any sauce of your choice.
