Hello everyone and welcome to Fides Kitchen where you get the opportunity to own your own meal. Traditional breakfast is sometimes tiring right? Well, don’t worry. Here in Fides Kitchen, we will make cooking interesting for you.
I am going to take you on a journey through breakfast where every week of this month we will learn one new recipe I know you will all love.
And so for this week, I will teach you a very delicious and easy to cook breakfast which I call plantain frittata – you like the name right?
First of all let me introduce you to the ingredients:
4 ripe plantains
1 medium size green bell pepper
2 red bell peppers
2 Seasoning cubes (Knorr)
Salt to taste
Wash and slice the plantain in a circular form, fry, and set aside.
Now break your eggs inside a bowl and add your sliced green bell pepper and red bell pepper, dice your already cooked beef/chicken and add it to the egg. Then add your seasoning (preferably Knorr), add salt to balance the taste. Mix them all together.
Now grease your frying pan with vegetable oil/butter, pour the mixtures into the pan and bring the star of the dish which is the fried plantain, and start placing them on top of the mixture. When that is done, cover and allow to cook under a low heat for 15mins before bringing it down.
And plantain frittata for breakfast is ready. Eat with tea or chilled juice
