Fides Kitchen – YAMBEEFDODO

y Chioma Nnagbo

YAMBEEFDODO is simply a twist of PLANBEEF recipe (hope you tried out the Planbeef recipe and enjoyed it). It is fusion of beef, fried plantain, fried yam and spicy tomato/pepper stew.

Unlike PLANBEEF, YAMBEEFDODO isn’t as sweet as PLANBEEF because the addition of yam knocks off some of the sweetness of the ripe plantain thereby making it more filling and a full meal rather than a dish.

Let me introduce you to the ingredients

Sizeable yam
3 ripe plantain
500grm beef (parboiled)
5 large Tomatoes
6 red bonnet Pepper
3 medium size Onion bulbs
Red, Green and
yellow bell pepper (chopped)
Vegetable oil for frying
1 teaspoon of Curry powder
3 Seasoning cubes
1 teaspoon of Thyme
Salt to taste

Blend the tomatoes, fresh pepper and one onion together till semi smooth and set aside. Chop the bell peppers and one onion and set aside.

Chop the yam into big size, cut the plantain in cube shape and the parboiled beef. fry till golden brown and set aside.

Pour vegetable oil into a deep pan, place on medium heat. When hot, add the chopped onions, sauté till translucent, then add the tomato, pepper and onion mix, thyme, curry powder, seasoning cube and salt to taste. Fry for 10-12 minute (be sure to stir every now and then to prevent burning).

Add in the chopped bell peppers and fry for 3mintues. Add the fried beef then the fried yam, stir and combine, leave to cook for 2 minutes. Then add the fried plantain, cook for a minute. Do not cook for too long to avoid the plantain becoming soggy.

YAMBEEFDODO Is ready for consumption…
