Still on our yam series: this week I am going to teach you how to make a hard but wonderful way of cooking yam (remember nothing good comes easy). Let me introduce you to a very wonderful, special and mouthwatering recipe called YAM BALLS. Are your ready for another journey?
5 sliced Yam
½ onion bulb
2 scotch bonnet Peppers
1 seasoning cube
½ teaspoon of grounded pepper
1 garlic clove
Vegetable oil for frying
1 cup of all-purpose flour
1 cup of bread crumbs
¼ teaspoon curry powder
¼ teaspoon thyme
Salt to taste
Place your pot on a low heat and add little groundnut oil. Fry the sliced onion and grated garlic for about 30 seconds (this is to build up flavour for your yam ball). Add the fresh pepper and allow to fry for another 30 seconds. Then add two cups of water (enough water to cook the yam). At this stage, you add your curry, salt, thyme and pepper.
Allow to cook for some seconds and then add your yam, allow to cook for 5 mins.
Drain the water from the yam and smash your yam, make sure there are no much lumps in it. Now add your protein (smashed fish, chicken breast, or beef) to the smashed yam and mixed well, then set aside.
TO MAKE THE BALL
Get your flour, egg, and bread crumbs in separate bowls. Dab your hands in some flour so that the yam does not stick to your hands. Use spoon and scoop the smashed yam, place it on your palm and roll until your ball is formed; gently roll the ball into your flour until it is well coated. Then generously coat it with the egg, and finally with the bread crumbs (the bread crumb is to make the yam crispy). Then roll again to give you that perfect ball shape. Repeat this until your smashed yam is finished.
Place your frying pan with oil in it on fire and allow to heat (the oil should be big enough to dip fry).
Now place your yam in batches into the hot oil and fry until it’s golden brown.
And your amazing yam ball is ready to feast on. You can have this food with stew, pepper sauce, and any sauce of your choice.
