Fides Kitchen – Yam And Garden Egg Porridge

Again, we have come to the end of another series, and I know you had fun in this journey of yam series because I did.

Because it’s the last week of the month and because I like saving the best for the last, I’m glad to introduce to you my very own specialty. Do you know that garden egg is not just meant for meetings, traditional marriages and funerals? Do you know you can use it to prepare yam? Do you also know that the nutritional value for of these two foods (yam and garden egg) is second to none? I promise you that after eating this food, you will not want to prepare yam porridge without garden egg in it.

And so, to end up the yam series, I bring to you a super exciting and mouth watering dish: yam and garden egg porridge.

Let me introduce you to the ingredients

INGREDIENTS

10 garden eggs
Half boiled yam (as many as you want)
1 medium size green bell pepper
5 pieces of red pepper
5 fresh tomatoes
1 medium sized onion
2 garlic cloves
Smoked fish
Cow skin (kpomo)
Cray fish
2 Seasoning cubes
½ tablespoon of ground pe

PROCEDURE
Wash the garden eggs and other vegetables. Chop the bell pepper and garden egg into small pieces and blend together (in case you don’t have a food processor, you can make use of mortar). Sliced also the tomatoes and onion and set aside, chop the cow skin (kpomo) into small pieces, clean the smoked fish and set aside.

On a low heat, place your pot and pour your palm oil, then you add your onion. Allow to fry for some minutes, then you add your grated garlic, stir and allow to fry for three mins. Next, you add the sliced tomatoes and allow to fry for 5 mins. Add your chopped cow skin (kpomo) and fish, stir a little and allow to cook for 2mins.

Next, add your blended/smashed garden egg and bell pepper and stir very well, at this point, add all your condiments (salt, seasoning cube, cray fish, and ground pepper) and stir. Cover to cook for 3mins. Next is the star of the month (YAM), pour half cup of water into your sauce, and add the already half boiled yam into the sauce, stir very well this time so the flavor mixes very well with the yam. Cover to cook for 5 mins.

And viola Food is ready. Simple, right?
