Hello good people,

I hope you enjoyed your Plantain Frittata of last week? Still on the breakfast series, this week I will be giving you one of my favourite Pancake Recipes. Now, do you have banana in your house that is getting spoilt? Do you know that wastage is a sin before God and man? Dont worry,Fides kitchen is here to help you ensure that there shall be no wastages in your household, ever again. Let me introduce you to this wonderful and delicious pancake recipe called BANANA PANCAKE. I assure you the taste of the breakfast is so out of this world.

Before we continue, let me introduce you to the ingredients:

2 ripe Bananas
250 grammes of flour
1 teaspoon of sugar
½ teaspoon baking soda
1 egg
½ cup butter milk
1 teaspoon Baking Powder
½ teaspoon of Vanilla
25 grammes of butter /vegetable oil
A pinch of salt

Sieve your flour and the baking powder and then, mix your entire dry ingredients together. Dig a well and add your liquids and mix. Then finally bring your marshed banana and add to the mixture, Mix very well until the ingredients are well combined and turns into a batter with lumps in it. Next, you set the frying pan on a low heat and grease your pan with oil/butter and then pour your batter (your desirable size) into the frying pan. Allow to bake for about 3mins, you will notice some bubbles coming out form the batter: that shows that the other side is cooked. Then, turn the pancake to the other side, so the other part will cook well too. Repeat this method until the batter finishes from the bowl.

Your breakfast is ready! You can serve this with fried egg, tea or chilled juice.
